Easy Instant Pot Dinners for Busy Families #1

I had a friend once tell me their head hurt when they heard our family’s schedules. Soccer practices, gym practices, basketball practices and sprinkle in karate and school events, we never get a break during the week.

On a typical weekday, either I or DH are running from work to pick up or drop off kids to whatever sport they have. With all that, no one is ever home at the same time to eat, much less cook it. I’ve become a pro making instapot meals. Easy to start and always warm when kids finish their practice and come home starving.

Ever Wednesday, I’ll be sharing our tried and true easy dinners that will help you out when you are racing from one side of town to the other, in hopes of not being late, again.

Today’s dish: Lemon Chicken via Instant Pot

  • 1.5 lbs of chicken breast
  • 2 lemons (for juice)
  • 2 cloves of garlic
  • Seasonings: lemon pepper, salt, pepper, garlic powder (use your judgement – you can always add a little more after it cooks)
  • 2 tbsp of olive oil
  • 1/3 cup of chicken broth

Place the ingredients in the Instant Pot and pressure cook. If you are starting this before you head into work, pick slow cook method.

Once cooked, the chicken will shred very easily.

Serve with your kiddos favorite veggies and rice (I love trader joe’s frozen rice).
